Bikini Recipe

Serves 10 people

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Put the listed components inside a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Next, remove from the stove and let it to cool entirely. Decant to a clean bottle, seal and store chilled, it will last for about four weeks.

To make Batch Mix: Pour the specified spirits and syrup into one big jug, allow it to infuse for an hour, then strain preferably using muslin, making it perfectly clear.

When ready to serve: Measure 85ml from the cocktail base into a cocktail shaker containing ice, gently stirring carefully for a minute to chill. Filter into a frosted cocktail glass or a similar vessel, decorate with some cranberries and complete it by giving it a light spray with the mandarin essence over the top.
